Chicken Bread Salad

Tasty chickenand bread on top of a variety of veggies, a perfect meal for kids and adultsalike.

Ingredients

  • 24 slices French bread 3/4 inch think
  • 3 cups chicken breast cooked and cubed
  • 4 pieces medium tomatoes cut into chunks
  • 1 can greatnorthern beans rinsedand drained
  • 1 piece large cucumber seededand chopped
  • 1/4 cup fresh basil chopped
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 3/4 cup balsamic vinaigrette
  • 1/2 cup Parmesan cheese shredded

Instructions

  • Placebread on a baking sheet.
  • Broil3-4 inches from the heat for 2-3 minutes or until golden brown, turning once.
  • Cool on a wire rack.
  • Cut bread into 1-inch pieces.
  • In a large bowl, combine the bread, chicken, tomatoes, beans, cucumber, basil, salt and pepper.
  • Drizzle with vinaigrette and toss to coat.
  • Refrigerate for 30 minutes.
  • Sprinkle with Parmesan cheese and toss.
